Baked Fruit with Frozen Yogurt

Ingredients

  • 3 c

    Thinly sliced apples

  • 4

    Sliced stone fruits (such as plums, peaches, and pluots)

  • 1

    Mango - scored and seperated

  • 1/2 c

    Seasonal berries (optional)

  • 2

    Packets of True Lemon

  • 3 tbsp

    Whole wheat flour

  • 1 tbsp

    Brown sugar

  • 1/2 c

    Quick cooking oats

  • 1/2 tsp

    Ground cinnamon

  • 1/4 tsp

    Ground nutmeg

  • 1/4 tsp

    Ground ginger

  • 2 tbsp

    Butter

  • 2 c

    Vanilla frozen yogurt

  • 3 tbsp

    Maple syrup

Directions

  1. Preheat the oven to 375 F.
  2. Combine fruit and True Lemon together. Spoon half of the mixture onto an 8x8x12 inch metal or foil pan.
  3. In a separate bowl combine brown sugar, flour, oats, cinnamon, ginger, and nutmeg. Stir well.
  4. Cut in butter with a pastry blender until the mixture resembles coarse crumbs.
  5. Sprinkle half of the mixture evenly over the fruit mixture. Add the remaining fruit and sprinkle another half of the mixture on top.
  6. Cover pan tightly with foil, and bake for about 30 minutes.
  7. Remove cover and bake additional 10 minutes.
  8. Spoon approximately 1 cup of the fruit mixture into a small bowl, and top with 1/4 cup of yogurt. Drizzle some of the fruit syrup on top, and enjoy!
