Ingredients

  • 1 1/2 tbsp

    butter, softened

  • 1 tsp

    minced seeded jalapeno pepper

  • 1/4 tsp

    black pepper

  • 3/4 tsp

    salt, divided

  • 4

    (6-ounce) red snapper or other firm white fish fillets

  • Cooking spray

Directions

  1. Combine the first 4 ingredients in a bowl. Stir in 1/4 teaspoon salt. Cover and chill.
  2. Heat a large nonstick skillet over medium-high heat. Sprinkle both sides of the fish with the remaining 1/2 teaspoon salt and black pepper. Coat pan with cooking spray.
  3. Add fish to pan; cook 3 minutes on each side or until fish flakes easily when tested with a fork.
  4. Plate the fish, and serve with the butter mixture on the side. Garnish with fresh or grilled vegetables.
