Classic Lime Margarita Cheesecake

Lime Margarita Cheesecake on a white plate

Ingredients

  • 1 1/2 c

    graham cracker crumbs

  • 1/3 c

    butter, melted

  • 5

    8-ounce packages of cream cheese, softened


  • 1 1/2 c

    sugar


  • 3

    large eggs

  • 1 tsp

    vanilla

  • 2 tsp

    Kosher salt

  • 2 c

    white chocolate chunks

Directions

  1. Preheat the oven to 350 degrees.
  2. In a small bowl, mix graham cracker crumbs and butter with a fork. Press onto the bottom and 1-inch up side of a 10-inch springform pan.
  3. Beat cream cheese on high until fluffy. Add sugar, 1/2 cup at a time. Beat well, and scrape down the bowl.
  4. Add eggs, vanilla, and True Lime. Beat well.
  5. Stir in kosher salt and white chocolate chunks. Pour into crust. Bake for 45 minutes. Turn off the oven and partially open the oven door.
  6. Leave cheesecake in the oven for 30 additional minutes. Remove from the oven and cool on a wire rack.
  7. Cover, and chill for 8 hours. Remove from springform pan when ready to serve.
