Ingredients
- 1 1/2 c
graham cracker crumbs
- 1/3 c
butter, melted
- 5
8-ounce packages of cream cheese, softened
- 1 1/2 c
sugar
- 3
large eggs
- 1 tsp
vanilla
- 2 tsp
Kosher salt
- 2 c
white chocolate chunks
Directions
- Preheat the oven to 350 degrees.
- In a small bowl, mix graham cracker crumbs and butter with a fork. Press onto the bottom and 1-inch up side of a 10-inch springform pan.
- Beat cream cheese on high until fluffy. Add sugar, 1/2 cup at a time. Beat well, and scrape down the bowl.
- Add eggs, vanilla, and True Lime. Beat well.
- Stir in kosher salt and white chocolate chunks. Pour into crust. Bake for 45 minutes. Turn off the oven and partially open the oven door.
- Leave cheesecake in the oven for 30 additional minutes. Remove from the oven and cool on a wire rack.
- Cover, and chill for 8 hours. Remove from springform pan when ready to serve.
