Creamy Cauliflower Dip with True Lemon

This is a fun change from traditional hummus, made with cauliflower instead of chickpeas.

Ingredients
- 1
head cauliflower, cut into small florets
- 2 tbsp
tahini
- 2 tbsp
olive oil (extra reserved for presentation)
- 1
clove garlic
- 2
packets True Lemon
- 1 tsp
turmeric
- 1/2 tsp
garlic powder
Dash of both salt and pepper
Paprika, as garnish
- 1 tbsp
chickpeas or toasted pine nuts, as garnish (optional)
Directions
- Pour mixture into a serving bowl, and top with a drizzle of olive oil, a sprinkling of paprika, and either chickpeas or toasted pine nuts (if desired).
- Serve with sliced vegetables, olives, tortilla chips, or toasted pita triangles. Enjoy!
- In a large pot over high heat, add about 3-inches of water and bring to a boil.
- Lower heat to medium, then add cauliflower and cover.
- Toss frequently for 5-10 minutes until tender.
- Drain and set aside.
