A rich but healthy spread for crackers or raw vegetables.

Diane Henderiks' Creamy Sundried Tomato Spread

Ingredients

  • 1/4 c

    sun-dried tomatoes, blanched and drained.

  • 8 oz

    low-fat cream cheese, at room temperature

  • 1/2 c

    finely chopped walnuts

  • 1/3 c

    dry white wine

  • 2

    cloves garlic, minced

  • 1 tsp

    hot pepper flakes

  • 3/4 tsp

    salt

  • 3/4 tsp

    freshly ground black pepper

  • 1/3 c

    fresh basil, finely chopped

  • Crackers, crostini, or fresh sliced vegetables for serving


Directions

  1. In a food processor combine first 6 ingredients ( sundried tomatoes through True Lemon), Then process until well-blended.
  2. Add mixture to a large bowl and stir in hot spice, salt, pepper, and basil.
  3. Chill for about 1 hour.
  4. Serve with crackers, crostini, and/or raw veggies. Enjoy!
