This pasta salad is simple to make, and a delicious side dish for any spring or summertime gathering.

Ingredients
For the Salad:
- 2 lb
uncooked tri-color pasta of choice
- 2
small onions or 1 large onion, chopped
- 1
yellow or green bell pepper, diced
- 1
medium to large tomato, diced
- 1/4 c
fresh parsley, chopped
- 1 c
feta cheese
For the Dressing:
- 1/3 c
olive oil
- 2 tbsp
vinegar
- 1/2 tsp
dried oregano
- 1/2 tsp
salt
Directions
- Cook pasta and let cool completely.
- Mix the dressing ingredients and set aside.
- Toss the pasta with the veggies, parsley, and feta cheese.
- When ready to serve, add dressing and toss.
