This is our “go-to” good anytime salad recipe - you can’t go wrong!

Healthy True Lemon cobb salad with chicken

Ingredients

  • 3 c

    Mixed greens

  • 2 c

    Mixed veggies: cherry tomatoes, red onions, cucumbers, garbanzo beans and beets (optional)

  • 4 oz

    Grilled Chicken

  • 1

    Sliced hard-boiled egg

  • 1/2

    Chopped apple or 1/4 cup currants (optional)

  • 2 tbsp

    Almond slivers (optional)

  • Sprinkle of feta or parmesan cheese (optional)

  • 1 tbsp

    Extra-virgin olive oil

  • 1 tbsp

    Apple cider vinegar

  • 2

    Packets of True Lemon

  • 1 tsp

    Honey

  • Dash of sea salt

  • Dash of pepper

Directions

  1. Assemble salad: mixed greens, cherry tomatoes, red onions, cucumbers, grilled chicken and hard-boiled egg.
  2. Combine the last 6 ingredients in a mason jar to make the dressing. Cover and shake to mix.
  3. Drizzle 2-3 ounces of dressing over salad and serve.
  4. Refrigerate remaining dressing.
