We love this salad when we're not too hungry or on days when we're not as active. It’s light and refreshing!

A refreshing and colorful salad with fresh ingredients

Ingredients

  • For the salad:

  • 2 c

    (or 3 cups) of arugula

  • 1 c

    (or 2 cups) mixed veggies: cucumbers, sprouts, tomatoes, red peppers, cilantro or parsley

  • Sprinkle of toasted almonds


  • 1/2 c

    chilled quinoa

  • 1/2

    sliced pear

  • 1/2

    can albacore tuna (optional)


  • White kidney beans (optional)

  • For the dressing:


  • 1 tbsp

    extra-virgin olive oil


  • 1 tbsp

    white wine or champagne vinegar


  • 2

    packets of True Orange

  • 1/2 tsp

    dijon mustard


  • Dash of sea salt


Directions

  1. Assemble salad: arugula, cucumbers, sprouts, tomatoes, red peppers, cilantro (or parsley), chilled quinoa, and almonds.
  2. Combine all dressing ingredients in a mason jar. Cover and shake to mix.
  3. Drizzle 2-3 ounces of dressing over salad and serve.
  4. Refrigerate remaining dressing.
