Super Delicious True Lemon Pound Cake

This delicious pound cake is not as sweet as some but still is a wonderful treat.

Super Delicious True Lemon Pound Cake

Ingredients

  • 1 1/2 cups butter or margarine (3 sticks), softened


  • 2 1/4 cups granulated sugar


  • 6

    large eggs


  • 1 tbsp

    vanilla extract

  • 3/4 tsp

    salt

  • 3 c

    cake flour (not self-rising)

  • Confectioners' sugar


  • 8 to 10 packets True Lemon

Directions

  1. Preheat oven to 325 degrees F.
  2. Grease and flour 10-inch Bundt pan.
  3. In large bowl, with mixer at low speed, beat butter, granulated sugar and True Lemon until justblended.
  4. Increase speed to high; beat until light and fluffy, about 5 minutes, frequently scraping bowl with rubber spatula.
  5. Reduce speed to medium.
  6. Add eggs, one at a time, beating well after each addition.
  7. Add vanilla and salt.
  8. Increase speed to high; beat 3 minutes, scraping bowl.
  9. With wire whisk, stir in flour just until smooth.
  10. Spoon batter into prepared pan; spread evenly.
  11. Bake until toothpick inserted near center comes out clean, 1 hour to 1 hour 10 minutes.
  12. Cool in pan on wire rack 10 minutes.
  13. Run tip of thin knife around edge of cake to loosen.
  14. Invert onto rack to cool completely.
  15. Dust with confectioners' sugar.
