A beautifully colored dish, packed with rich and intense flavor. Best served over steamed jasmine rice, or fresh greens.

Sweet True Lime Scallops

Ingredients

  • 1 1/2 lbs fresh or thawed scallops


  • 3 tbsp

    vegetable oil

  • 2 tbsp

    brown sugar

  • 1 tbsp

    brown mustard


  • 1/2 tsp

    freshly ground black pepper

  • 1

    orange or red bell pepper, diced


  • 1

    small yellow mango, chopped (frozen works fine!)

  • 1 c

    jasmine rice, cooked

    packets True Lime

Directions

  1. Prepare rice, and set aside.
  2. In a medium bowl, mix together the vegetable oil, brown sugar, brown mustard, black pepper, and True Lime. Stir in the scallops to coat well.
  3. In a large skillet over medium-high heat, saute the scallop mixture and sliced sweet bell pepper for about 5 minutes, or until scallops arecooked through.
  4. Remove skillet from heat and stir inthe chopped mango. Serve immediately over rice.
