Tilapia with Peach Mango Salsa

Tilapia with Peach Mango Salsa

Ingredients

  • 1

    ripe mango, chopped to small chunks

  • 2

    ripe peaches, chopped to small chunks

  • 1

    small finely chopped red onion


  • 1

    small finely chopped red or green pepper

  • Small handful of fresh chopped cilantro (optional)


  • 2

    True Orange packets

  • 2

    True Lemon packets

  • 4

    4-ounce pieces of tilapia

  • Kosher salt pepper


  • Extra virgin olive oil


Directions

  1. In a large bowl, combine the first 7 ingredients (mango through True Lemon). Mix together and set aside.
  2. Add a small amount of oil to a non-stick pan over medium heat. Season tilapia with salt and pepper, and cook evenly for about 3-4 minutes on each side.
  3. Serve with peach mango salsa, and a side of brown rice, quinoa, or couscous if desired!
