A chilled shrimp dish that lets the flavors fuse together over time. Unique and delectable!

Ingredients

  • 2 tbsp

    olive oil

  • 2

    cloves garlic, minced

  • 1 lb

    uncooked shrimp (thawed if frozen), tails left on, peeled and de-veined

  • 2 tbsp

    Dijon mustard

  • 2 tbsp

    chopped fresh basil (fresh dill works too)

  • 2 tsp

    turmeric

Directions

  1. Warm oil on medium heat in a large skillet until shimmery. Add garlic and cook for a minute.
  2. Add enough shrimp to cook in a single layer. Cook until just opaque in the center, turning once, about 5 minutes. Repeat with remaining shrimp.
  3. Meanwhile, in a large bowl combine remaining ingredients. Add shrimp and gently combine.
  4. Cover and refrigerate for at least two hours and up to 24 hours.

Recipe Notes

To serve as an appetizer, place in a dish lined with butter lettuce leaves and mound shrimp on top. To serve as a main dish, serve with warm brown rice and lettuce leaves for scooping!
