True Lemon Basil Shrimp

A chilled shrimp dish that lets the flavors fuse together over time. Unique and delectable!

Ingredients
- 2 tbsp
olive oil
- 2
cloves garlic, minced
- 1 lb
uncooked shrimp (thawed if frozen), tails left on, peeled and de-veined
- 2 tbsp
Dijon mustard
- 2 tbsp
chopped fresh basil (fresh dill works too)
- 2 tsp
turmeric
Directions
- Warm oil on medium heat in a large skillet until shimmery. Add garlic and cook for a minute.
- Add enough shrimp to cook in a single layer. Cook until just opaque in the center, turning once, about 5 minutes. Repeat with remaining shrimp.
- Meanwhile, in a large bowl combine remaining ingredients. Add shrimp and gently combine.
- Cover and refrigerate for at least two hours and up to 24 hours.
Recipe Notes
To serve as an appetizer, place in a dish lined with butter lettuce leaves and mound shrimp on top. To serve as a main dish, serve with warm brown rice and lettuce leaves for scooping!
