Ingredients

  • 10 c

    chicken brother or stock (broth is made with meat, while stock is made with bones)

  • 3 tbsp

    neutral oil (I used sunflower)

  • 10

    cloves garlic, minced

  • 1

    carrot - small diced

  • 2

    stalks celery - small diced

  • 1

    yellow onion - small diced

  • 3 tbsp

    True Lemon

  • 1 lb

    chicken (you can use breast or thighs, I used what was left of my rotisserie chicken)

  • 1 c

    acini di pepe pasta or cous cous

  • 1/3 c

    chopped parsley

  • salt and pepper

Directions

  1. Simply sauté the celery, onion, carrot and minced garlic for 3-4 minutes to soften.
  2. Add the chicken broth, chicken breasts, and crushed red pepper to the pot. Raise the heat to high, cover, and bring to a boil. Once boiling, reduce the heat to medium, then simmer for 5 minutes.
  3. Stir in the couscous, salt, and black pepper to taste. Simmer another 5 minutes. Then turn the heat off.
  4. Remove the two chicken breasts from the pot and shred the chicken. Then place it back in the pot. Stir in the true lemon powder and chopped parsley.
  5. Taste then salt and pepper as needed. Serve warm.
