True Lime Cilantro Rice with Shrimp

True Lime Cilantro Rice with Shrimp

Ingredients

  • 1 c

    long grain white rice, or Jasmine rice

  • Coarse salt


  • 1/2 c

    fresh cilantro

  • 4

    Packets

  • 1 tbsp

    olive oil

  • 1

    garlic clove

  • cooked shrimp

  • black beans

Directions

  1. In a medium saucepan, bring 1 1/2 cups water to a boil.
  2. Add rice and 1/4 teaspoon salt, cover, and reduce to a simmer. Cook until water is absorbed and rice is just tender (about 16 to 18 minutes).
  3. Meanwhile, in a blender or food processor, combine cilantro, True Lime, oil, garlic, and 2 tablespoons water; blend until smooth.
  4. Stir into cooked rice, and fluff with a fork. Serve topped with cooked shrimp and black beans.
