True Lime Fish with Corn and Peach Salsa

Ingredients

  • 1 tbsp

    butter

  • 4

    salmon, swordfish, tuna, or halibut steaks, 1 inch thick (about 1-1/2 pounds)

  • 1

    teaspoon from True Lime shaker, or 2 packets True Lime

  • 1/2 tsp

    chili powder

  • 1-1/2 cups chopped tomatoes


  • 2

    green onions, cut into 1-inch pieces

  • 1 c

    frozen corn, thawed

  • 1

    can (4 ounces) chopped green chilies, drained

  • 1

    peach, diced

  • 2 tbsp

    chopped fresh cilantro

  • Salt & Black Pepper


Directions

  1. In a pan over medium-high heat, add butter. Add fish and season with True Lime, salt & black pepper, and chili powder. Cook for about 5-10 minutes until done, and set aside to cool.
  2. Meanwhile, prepare salsa by combining the remaining ingredients in a large bowl and mixing well. Season with salt and additional True Lime, if desired.
  3. Serve with a side of rice and enjoy!
