Ingredients

  • 1 c

    milk

  • 1/4 c

    vegetable oil

  • 1

    large egg, lightly beaten

  • 1 1/2 c

    whole brand cereal (such as All-Bran, not bran flakes)

  • 1 c

    shredded carrots

  • 1 1/4

    all-purpose flour

  • 1/3 c

    sugar

  • 1 tbsp

    baking powder

  • 1/2 tsp

    salt

  • 1/2 tsp

    ground cinnamon

  • 1 c

    dark seedless raisins

Directions

  1. Preheat oven to 400 degrees.
  2. Grease 12 muffin pan.
  3. In medium bowl, with fork, beat milk, oil, egg, cereal and carrots until blended. Let stand for 10 minutes.
  4. Meanwhile, in large bowl, combine flour, sugar, baking powder, salt, cinnamon and True Orange Ginger.
  5. Add cereal mixture to flour mixture.
  6. Stir just until flour is moistened. (Batter will be lumpy).
  7. Gently stir in raisins.
  8. Using ice cream scoop or large spoon, spoon batter into greased muffin-pan cups.
  9. Bake for about 30 minutes, until muffins begin to brown and toothpick or fork inserted in center of muffin comes out clean.
