Ingredients

  • For The Base

  • 2

    salmon fillets

  • 1/2

    onion, sliced

  • 1

    leek (or shallot)

  • 1 tbsp

    garlic, chopped

  • 1 c

    sweet potatoes, cubed

  • 1 tbsp

    fennel, halved

  • 1 c

    cauliflower, chopped

  • 1/2 c

    carrots, sliced

  • 1 c

    green beans

  • 1 tbsp

    True Lemon Pepper Spice Blend

  • For The Marinade

  • 1/2 c

    soy sauce

  • 1/2 c

    rice wine vinegar

  • 1/3 c

    olive oil

  • 2 tbsp

    honey

  • 1 tbsp

    peeled and grated fresh ginger

  • 4

    packets of True Lemon

  • 2 tbsp

    water

  • 1 tsp

    garlic powder

  • 1 tsp

    sesame oil

  • 1/4 tsp

    cayenne pepper

Directions

  1. Combine all marinade ingredients and pour into a plastic bag with salmon fillets and let sit at room temperature for 1 hour.
  2. Preheat oven to 375 degrees.
  3. Chop and slice veggies and toss with True Lemon Pepper Spice Blend.
  4. Arrange veggies on a cooking sheet.
  5. Drain salmon and pat dry with paper towel. Place on top of veggies.
  6. Cook 20-40 minutes or until salmon is done. Broil for last 5 minutes to add a bit of crisp.
