Ingredients
For The Base
- 2
salmon fillets
- 1/2
onion, sliced
- 1
leek (or shallot)
- 1 tbsp
garlic, chopped
- 1 c
sweet potatoes, cubed
- 1 tbsp
fennel, halved
- 1 c
cauliflower, chopped
- 1/2 c
carrots, sliced
- 1 c
green beans
- 1 tbsp
True Lemon Pepper Spice Blend
For The Marinade
- 1/2 c
soy sauce
- 1/2 c
rice wine vinegar
- 1/3 c
olive oil
- 2 tbsp
honey
- 1 tbsp
peeled and grated fresh ginger
- 4
packets of True Lemon
- 2 tbsp
water
- 1 tsp
garlic powder
- 1 tsp
sesame oil
- 1/4 tsp
cayenne pepper
Directions
- Combine all marinade ingredients and pour into a plastic bag with salmon fillets and let sit at room temperature for 1 hour.
- Preheat oven to 375 degrees.
- Chop and slice veggies and toss with True Lemon Pepper Spice Blend.
- Arrange veggies on a cooking sheet.
- Drain salmon and pat dry with paper towel. Place on top of veggies.
- Cook 20-40 minutes or until salmon is done. Broil for last 5 minutes to add a bit of crisp.
